Sekaya Puffs

Morning with puffs! with fillings of 'Sekaya'.  Sekaya is about steam custard of eggs and sugar blended with 'Pandan" leaves extract. One on my Mother in Law's recipe that she would prepare during the Eid celebration or at any time that she wish to have it.

Making this cream puff is easy and fast except that it requires a good stir to have it's texture smooth and creamy before placing on the baking tray. It can be done by either piping it with some nozzles, but what I have done is by taking a tablespoon and holding the spoon at sharp 90 degrees and have it swirl and drop this cream puff batter, as I would prefer, not to have it done with the piping bag... well, that will depends on how you would like it done.

After baking the cream puffs, leave it to cool, cut open the upper section of the puffs and insert in the sekaya, as these puffs are hollow and in fact having it filled would be better.

As of the above,  it can also be done by topping it with the 'sekaya' or pandan custard by just spooning to the top of it and have it gulp.. ahaaa.. the lazy way!

Ingredients for the cream puff
1/2 cup of water
1/2 cup of milk
4 free range eggs
3 oz of unsalted butter
1/4 tsp of salt
1/2 tsp of sugar
1 cup of multi purpose flour.

Heat up oven at 180 deg. C for 10 minutes

1. In a saucepan, combine, water, milk, sugar, salt and butter and boil together to incorporate.
2. Once the mixture is incorporated, add in the flour, stir and mix until batter is smooth and shiny.
3. Bring down to cool to a lukewarm and add in the eggs, one at a time, stir and mix until egg is finish.
4. Prepare a baking dish, layer it with parchment paper,  using a tablespoon, scoop the mixture and straightened the spoon to 90 deg, drop and swirl the mixture on to the parchment paper.
5. Bake for 20 minutes till golden brown and leave to cool.

Ingredients for Sekaya
5 large eggs
1 cup of thick coconut milk
1 cup of sugar
A pinch of salt
1/2 cup of 'Pandan' extract

(To be safe equal amount of the above ingredients equivalent to the bowl/cup used, except for the salt, would be much better to have it measured)

1. In a blender, beat eggs and sugar to dissolve, add in the coconut milk, salt and pandan extract. Beat until mixture is smooth and place it on desired container and have it steam for an hour. Insert toothpick, to check it comes out clear, before turning off the heat.

Salam.. Kalau saya di KL pasti akannke gerai Pak Tam, Insyaallah, kalau ada kenduri kendara dari pihak keluarga disana, akan cuba contact Pak Tam..
